INGREDIENTS:

(a)Crust:

  • 1 1/2 cups chocolate cookie crumbs

  • 1/4 cup honey

  • 1/2 cup vegetable oil

(b)Filling:

  • 1 cup smooth peanut butter

  • 1/2 cup honey

  • 1/4 cup vegetable oil

  • 1 tsp vanilla extract

  • 1 cup Coconut Cream

  • 1 cup semisweet chocolate chips

DIRECTIONS:

  • Preheat the oven to 350F.

  • In a medium bowl, mix together the cookie crumbs, honey, and vegetable oil. Press the mixture into the bottom and up the sides of a 9-inch tart pan with a removable bottom. Bake for 8-10 minutes, or until set. Remove from the oven and let cool.

  • In a large mixing bowl, beat the peanut butter, honey, butter, and vanilla extract until creamy. Spread the mixture over the cooled crust.

  • In a small saucepan, heat the cream until hot. Remove from heat and stir in the chocolate chips until smooth. Pour the chocolate mixture over the peanut butter filling.

  • Refrigerate the tart for at least 1 hour, or until the chocolate is set.

  • Once the tart is set, remove it from the fridge and let it sit for about 10 minutes before slicing and serving.
