How to make Vegan Millet Pancakes?

The fluffy, creamy, and soft millet pancakes are delicious. They contain whole grains and a good amount of fibre, which will keep you feeling fuller longer.These pancakes are given a crunchy touch by the muesli, making them more interesting to consume.

Follow the recipe below for a quick and satisfying way to start your day. 

INGREDIENTS:

  • 1 cup of millet flour
  • ¾ cup of almond milk
  • 2 tablespoons of maple syrup or honey (optional)
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon (Dalchini) and a pinch of salt.
  • Additionally you may need some oil for cooking the pancakes.
  • To make it even more delicious you can add some fresh fruits like blueberries or bananas and chopped nuts such as almonds or walnuts.

Directions:

  • To prepare the batter for vegan millet pancakes, start by mixing together 1 cup of millet flour, ½ teaspoon of baking powder and a pinch of salt in a large bowl.
  • In another bowl, whisk together ¾ cup almond milk with 2 tablespoons melted coconut oil.
  • Add this to the dry ingredients and stir until it forms a thick batter.
  • If needed add more almond milk or water to reach desired consistency.
  • Finally mix in any optional flavors such as cinnamon if desired before cooking your pancakes.
  • You should begin by preheating your pan to a medium-high heat and then adding the batter to the pan.
  • At this point, you should monitor the pancake closely as it cooks – you’ll know when it’s done when golden brown spots appear on its surface and edges start to curl up slightly from the sides of your pan.
  • Use a spatula to flip your millet pancakes over, allowing them to cook for an additional 2-3 minutes before taking them off of heat entirely.
  • Add some fresh fruit such as sliced banana, blueberries, strawberries, kiwi or mango make for great toppings that add natural sweetness.
